Vitamin Deficiency: The vitamins in vegetables are essential to your overall health. Some can be stored for future use and others cannot. Fat-soluble vitamins, such as vitamins A, D, E, and K can be stored, but for the body to operate at its best, it also needs water-soluble vitamins. We need these vitamins every. single. day.
